André Chouvin, the owner- chef is native to the Rhone region. He trained with the biggest Chefs in France (Paul Bocuse, Paul and Marc Haeberlin, Jean Fleury and Michel Lorain), after honing his skills, Andre took his cuisine to conquest the United States, and then Australia.
The master chef returned to his hometown in France, In 2007, André Chouvin then opened his third gourmet restaurant Le Tilia in Joux.
The dining room is a elegant warm refuge in the mountainous terrain. The woodwork is reminiscent of the surrounding coniferous forests, while the art of the table promises a refined gastronomic experience.
